Thinking of going Occultist/Nightblade and focusing on mainly poison and bleed damage.
I'm sort of considering a melee focused build where I curse/ bleed everything, set down a sigil and some other shit and brute force it with the help of DoTs and debuffs.
I also have some nice gear that caters to blood and poison damage.
On the other hand, DoT damage is fucking worthless against bosses and monsters that can heal themselves so until I can afford Doom Bolt or something I may just be fucked and need to completely respec.

Dude listen, take my advice (I literally only play Occultist), one point into curse of frailty, and max the first ability in bloody pox. After that, level until you can get the trait that also HAPPENS to buff enemies. After that, lrn2kite and let ebola plague do the work. I recommend ranged with this kind of build, helps you kite.

A pet Conjurer build has the fastest clear time, and it's not really gear dependent. Just use every pet damage/attack speed/ offensive ability item you find.
It is a less active then other builds though, you're more of a support character, debuffing the occasional enemy. Build is amazing for farming.
If you want a more "active" builds, a Dreeg's Evil Eye Warlock or dual wielding handgun Sorcerer will reach some insane damage levels. But they are both kind of gear dependent.

I'm neither a warder or spellbreaker. I'm sorry your characters are dying. I do have some lifesteal with my Crimson Spike and reasonable CC resist. In fact, there isn't really anything that my character doesn't have a respectable amount of. I've seen those lifesteal builds you speak of and when the going gets tough, they have to resort to bottlenecking mobs in some choke point so they don't get analbasted because even if you do life steal all your life back in a cleave or what not, you're still susceptible to going from 100 to 0 when multiple enemies punch you in the dick.

Outside of DW pistol builds soldier is probably the best proccer in the game, and is certainly the best for melee.
Put points in cadence, then get points in zolhans, markovians and fighting spirit. That's 3 proc abilities right there, not including shit that procs on hit or procs when you block.

Is it just me or are the miniscule debuffs in DA and OA that some spells and skills do, like -45 DA with maxed out Vulnerability, incredibly useless? What is -45 DA going to serve? Maybe in Act 1 if you max it out you might see a difference, but beyond that it's nothing. In Elite and Ultimate it'll probably give you something like a 0.03% better chance to hit. This shit is useless. It should be a percentage that they reduce, not a flat number, and certainly not such a low flat number at that.

It's weird as hell senpai. What do you want to focus on? Arcanist/Shaman sounds like a good combination for lightning damage.
I play a warder myself, so I can't really tell you anything about arcanist tree, but my shaman one looks like this. Also Mogdroden's is worthless by itself, you only take it for the 10% extra health on the heart of the wild. Just level spirit focus in your arcanist tree and chug a spirit potion if you run out of mana.

Well it's mainly supposed to be a tanky 2h build. Sphere and primal bond give roughly 40% damage absorption. Savagery line for damage, primal strike line for aoe trash clear, everything else is mainly for survibility. I don't recall anything in soldier that gives percentage based damage absorb without requiring a shield.

Primal strike isn't worth it for AOE, just stick a tsunami or a tempest onto your savagery and you'll be fine. Also wind devils and storm totems are pretty great, since they scale with your damage. Defence is nice, but I really don't see how you'll be able to kill tanky enemies. Maybe that won't matter since you'll play with friends.
Soldier tree is mainly for the +15% physique and +25% hp and increases to offensive and defensive ability. On higher difficulties it becomes a problem to even hit an enemy, since going for tankiness leaves your offensive ability in the dumpster.
