The story introduction quests where you fight a monster are basically easy mode, the ones at the gate (there are two difficulties, then an invasion mode later) are harder. The ones at the board just require different things (Kill within a time limit, get a specific rank, capture, trip the monster, break a part) but use whichever difficulty it decides for the gate selection.
The difficulty you unlock after clearing the first at the gate usually adds attacks to the monster as well as giving a more limited selection of items at the camp. Yellow Caeserber gets a really long roll, a second dig attack and likes to start comboing out of his tail's mud sling, as an example. Chramine's slime slinging starts turning into sentient slime bombs. Velocidrome just generally gets angrier and hops everywhere. Gendrome turns the desert into a smokescreen by running round while Genprey try to attack you (he is so much fun now)

People hunt rajang because it's tied with deviljho for highest chance of giving you the highest level of relics/charms, and has about half as much health as jho and dies a lot faster. Statistically the weapons you can get from any monster are identical, but certain monsters give certain skins of various weapon classes. You aim for two monster GQs with the monster that has the skin you want in the first slot and rajang in the second, or double rajang if you don't care about the skin cus you're a shitter. Then ideally you try to get one where one of those monsters is in the first area when you leave camp to make grinding them a little faster.

I only say it because very few monsters have gotten cutscenes showing them fighting against other monsters. Brachydios was shown punching Agnaktor. Rajang's been shown being Rajang. Diablos has been shown having a fight with another Diablos. Yian Garuga has only actually been shown chasing Kut-Ku. Deviljho's been shown hitting things because it's hungry. Uragaan's been shown rolling around in a competition with another Uragaan.
Just take any of these monsters and give me a fighting cutscene that isn't just Brachy punching Agnaktor in the face and the poor fuck flopping over

The short answer is yes. Before Tri it was usable but not great. It got buffed in Tri, then buffed further in 4, and even further in X. You won't be getting any top times without a lot of items but it's a good weapon.
