Well no, Danse sponsors you to become a Knight, since he's only allowed to grant ranks up to Initiate. You become a Paladin after the reactor quest (I think? somewhere around there), and become a Sentinel if you follow through and destroy the Institute with the Brotherhood. On the Minutemen route you're still just a Paladin, should you opt to leave them alive.

4) do settlers care about food variety, bed "quality", or just that it's there
5) does tasking certain or unique settlers (eg, Anne Hargraves on clothing store) to certain stores or activities bring unique or better items
6) from how high can settlement turrets hit ground targets (3rd floor? 4th floor?)
7) do settlers level up at their job or whatever
8) will enemies simply cease attacking a settlement for all time once defense is high enough?

Really bummed there are so few pre-made settlements in 4. Assuming you don't make any of your own it's just Diamond City, Goodneighbor, Covenant, Bunker Hill, and tiny things like The Slog and Graygarden. Diamond City and Goodneighbor are the only ones of those that have any substantial quests, but there's no Rivet City to Diamond City's 'Megaton' in this game. The thing is that even if you invest really heavily in the settlement-building, you can only really do something with a limited number of them, to the point that only one or two areas like Sanctuary or Starlight become decently-livable areas.
Hangman's Alley would be nice but it's a catastrophe to try and build in and NPCs can't figure out pathing, and Castle is nice as a concept but requires janky repairs to make the walls look decent.

I'm lvl 8 with a laser rifle with sod all ammo and a pipe pistol, and mirelurks and super mutants take about 1/100th of their health bar off on every bullet or melee
