Are Gathering Hall monsters tougher than those form the Caravan quests? Do they get more health the more players zone in? I'm thinking of soloing GH quests to get the meat upgrades, but don't wanna bother doing them alone if they are stupid tough with just increased health.

I've been playing around with charge blades, what's the best one? I saw some anon post something about akantor and did a bit of research about that, turned out to be legit for the explpsions so I made a set with minds eye, attack up xl, and artillery god. Did well but it requires a bit to much aggression since blade mode does literally nothing without shield thrust.

This has been the 'general purpose, one size fits all' set that's been utilized for months. If you want you want to make variants (and you should) there's absolutely nothing stopping you.
If you aren't utilizing guard points semi-frequently on a lot of monster you're not doing it properly at all. You're not forced to AED after a GP, it's an entire platform to follow up with a wide variety of actions that can strung right into the middle of a combo string.
Gimmicky Akantor and Steve CB sets used exclusively on Rajang and Jho GQ TAs are not representative of how the weapon is played on the whole.

I managed to solo my way into G Rank via CB, and I'd like to get right back to it but I'm pretty tired of my set-up.
Could anyone do me a favor and let me know what I should aim for? I've been running with the Arachnoscale+ and the Mono S set with Attack Up (XL), Evasion +1, and Adrenaline +1 for way too long now.

Steve CB is terrible. Terrible. It doesn't synergize with the weapon at all. When you play CB, you don't want to be rolling a lot, you want to be guarding and counterattacking. Steve's CB doesn't have the sharpness to maintain that for long.
Ceadeus has the highest raw of any general-purpose Impact CB ("general-purpose" meaning "not relying on any sort of gimmick build"). It's an awesome weapon. The best? Nah. But if you can only make one CB, that one will get you through any monster effectively.

It's pretty much unrivalled when it comes to sharpness and true raw and is the best general purpose impact CB on offer, only rivalled by Rajang which you'd use on thunder weak monsters instead.

Ceadeus is simply the most well rounded craft-able CB on offer.

Ceadeus Regalia is still a great CB because GPs genuinely are really useful in many fights, but GP abuse is not always the optimal way to play the weapon. You should make Akantor, Seregios, Black Fatalis and Ceadeus. They can cover pretty much every monster you'll ever go up against.
