The only things you're missing out on are the Undyne fight and the Sans fight in the genocide run. Other than that, the genocide run is almost deliberately boring and unsatisfying.
I would suggest watching a highlights reel on Youtube (there are vids that just show where the major differences occur), but if you actually want to try your hand at Undyne/Sans yourself, you're gonna have to reset and murder everybody.

Undyne the Undying is mostly a memorization fight, since all of the patterns you need to block are exactly the same except the ones that are really slow. On flying arrows just try and go in circles and more often than not you will be fine.
