Yes, it's really good. It has some issues, but nothing that ruins it, sub30 fps (still very playable) and bad load times being the worst of them (specially combined with having to go to the hub to level up, then back again, making you go through 2 load times when none was needed if you could level at the lamps).

DaS3 wishes it was just a reskinned BB, also bosses in DaS3 are piss easy and unmemorable. BB bosses aren't significantly difficult if you've played a Souls game, but the renovation of the combat makes the early bosses tough as shit until you get used to it. NPC hunters are harder than anything else in the series and the DLC bosses are incredibly challenging while also having 10/10 presentation. OoK is the greatest boss fight of all time.

The combat system is worse as are the bosses. The setting is pretty good, Lothric is rad and Princes is one of my favorite Souls bosses, but not for challenge. My main problem with DaS3 is that you can start with the knight and there is never any reason to change your shit, you can just blow through everything immediately due to straight swords being OP and heavy armor not being heavy enough to make you slow roll.

BB's magic was pretty good. You had your projectile replacements, some buffs (along with one damn good one), one "fuck-you" AOE that was high-risk high-reward, and to top it off I'd say it was balanced even better than base Bloodtinge.
Reason I'd say that is that Arcane remains useful over both PvP and PvE, whereas Bloodtinge destroys PvP but sucks dick in PvE, 250-300 projectile damage mattering very little in that context.

I acknowledge the faults. Weapons being too spread out making you have to do ng+ to use them, some bosses are very easy and of course release loading screens were abysmal. The truth is that your complaints are ridiculous and that's why everyone is shitting on you. Variety of gear and weapons is excellent, their placement is harsh sometimes sure, but a lack of variety? Why even say that? Because there are two saw weapons with similar moves? Transforming weapons gives more depth to the combat than any of the other games and the dodge mechanics make it a different experience. Boss fights are incredible in their presentation and innovation, bigger bosses being much more than just "circle the legs" and humanoid bosses being much more intelligent and difficult than the other games as well as the NPC hunters being a great challenge. On top of that, the lore, atmosphere, level design, soundtrack etc. is all top-notch.
Chalice dungeons are dumb and farming for blood gems is dumb, but thankfully the game is so well designed that none of that shit matters and you can do anything else solely with skill. Also, chalice dungeons have their own unique bosses, you'd know this if you'd played it.

Bloodtinge is easily the strongest fucking build in the game, PvP and PvE. With just the story blt gem and decent physical gem, the chikage and bloodletter do fucking retarded amounts of damage.
Using a gun with bone marrow ash or simon's bow blade you can exploit the fuck out of enemy weakpoints that are usually very hard to reach for high damage or constant stagger-visceral. If you know what you are doing, Bloodtinge is a ludicrous powerhouse.

You can't parry cleric beast, you can shoot it in the face once for a visceral but that's not parrying. You definitely cannot parry ebrietas and her visceral scenario works the same way, shoot in the head and then visceral can become available.

Able to be Visceraled is not the same as Parryable. Anything that isn't humanoid (or BSB) cannot be parried, instead you do damage to thier point (usually the head) and eventually they get crippled for a visceral.
Not to mention only Skill builds get decent damage from Viscerals. STR builds get better damage from a Chsrged R2 or a BMA cannon shot.

for a game that has a big portion of it's appeal be replaying it, especially with the meta elements, it got incredibly boring after the first playthrough, with the exception being genocide route thanks to the drastic changes all around, which were pretty interesting, and to the UU and sans fights, the only worthwhile fights in the game.
and for a game that claims to give the player full freedom, you sure get shat on a ton for picking one of the routes the game offers, the whole moral bashing got old fast.

It's not random, it's the same mechanic as Tail Cutting in DaS1. After a certain damage threshold their head "breaks" and you can visceral them, after that the head is even more vunrable than before, takes 50% more damage, before eventually repairing (a red glow) which allows you to break it again. Same thing works against legs and arms on large bosses, except instead of a Visceral they just get stunned for a sec.
Usually you will get 1-2 Viscerals per fight against stuff like Amy or Eribritas bevause hitting the head is easy. Some bosses like Abhorrent beast it's nearly impossible to solo because standing in front of him is a death sentence.

Both BB and DS are shitty game concepts. Having no (good) story with very dumbed-down mechanics, I see no reason to play them except to do the same thing over and over.
I suck at this game because It's just the same dodge/block and attack scheme over and over and it gets too boring for me.
If you want a challenging game pick up Furi, at least it has an actual story and good soundtrack. It's also cheaper, and free right now if you fell for the PSN meme.

Complaints about parrying are the most retarded thing, it's why we get shit like Dark Souls 3 where you just have to R1 everything.
Saying that parrying is too easy is only valid if it's actually hard to beat the enemy without it, but it's not. It's a higher risk tactic who's only reward is a slightly faster kill and the simple satisfaction of landing it.

Absolute maximum you should have Endurance at is 20.
Vitality is good at 30 for base game, 40 and above for DLC - you'll need it.
If you're going Strength weapon/setup, then 50 Strength 25 Skill.
If you're going Skill weapon/setup, then 25 Strength 50 Skill.
Don't touch Bloodtinge unless you're aiming for a specific late-game weapon or two.
Do whatever else you want outside of the above if you're not planning to PVP/FightClub. Playing around with the Hunter Tools / Arcane items is absurdly fun.
It's my least favorite souls game
That said, It's still a decent pick up. Especially if you're new to the series.

Yeah I think they'd work alright for that, I don't think the level of your arcane has any effect on their ability to interrupt / stagger enemies, just increases the damage.

Its good but majorly overrated, possibly due to the whole lovecraftian side of it. To me the sidequests and lore in general (what little there was) wasn't remarkable and most characters feel rather unimportant, bordering on complete irrelevance.
Magic went to shit and was reduced to utility until the dlc, guns can be severely OP because they not only parry, they can stun by hitting weak spots like weapons and can do pretty good damage if you make a build for them. And while trick weapons are a nice concept the switch attacks felt pretty slow and the individual movesets were nothibg impressive or very inovative, save for stuff like the wheel.
It was a letdown for me, but maybe you'll like it.
