No, it's just a dozen different model variations of each species. There was a video where the creator explained how it works. Plants and animals are not procedurally generated, only their placement on planets etc.

The first thing I am going to do when I get this game is create a galactic space fleet that literally bombards trade routes until an entire galaxy yields before me. Then I will make a fleet of a dystopian pirate society that literally kills anything in it's path. The center planet of the galaxy will be an orbital bombardment center for defense and I will marry into the royalty and with the immense crafting system I am going to creat e soldiers of orcs and recreate the entire 40k universe in this game.
Then on the off chance that I find another human being I am going to force them to surrender their ship or be boarded and stripped of all currency and minerals. They will wander in another sector for years and without a ship they will never be free of that planet and be trapped for an eternity.
Then I will start going on rogue missions and using chemicals harvested from other planets to create natural disasters that will wipe out entire civilizations and even under-developed ones so they start believing in a god as I give them signs that they can't even fathom with my technology so they think that angels are giving them commands. That will be my second galaxy, and it will be glorious.

Sort of. They aren't pre-made variations, but variations created by the game. The program can change the parts like the heads, details, feet etc, the proportions of the skeleton, the size, the color, the sound, the behavior, and can even change the animations depending on size and bulk. The base skeleton is the same(although, in a few of the examples they have shown, legs and such have been added), but pretty much everything else can be changed. The behavior of an animal will also effect the parts it gets, i.e. predators will have big claws and sharp teeth. So the animals are procedurally generated, or a better phrase would be procedurally altered, to an extent.
The idea with this system is that a lot of earth creatures have similar characteristics. Change out a few parts, scale up a bit, change the sound, alter the behavior, and you turn a deer into a horse. Or giraffe. Or cow. Of course, the number of parts is limited, so it isn't the "infinite" variety the devs have been saying, and a lot of the "variation" is meaningless, but you can still get a lot of variation with this system. It all depends on how extensive the system is on release.
As for the number of base models, they've said there is "hundreds". I find that hard to believe myself, but there is at least a couple dozen from what the trailers have shown.
Plants, as far as I can tell, are affected, but not to the same extent as the animals. For plants, it's just color/size/position/arrangement of branches. I agree that the variation they've shown in plants is kind of disappointing.

I was finally going to get it for my PS4 but now I read that after all those patches the performance is so bad that it's "literally unplayable" with constant framedrops, slow-mo and freezing. It's just absolutely mind boggling to think that this plant was procedurally generated on the atomic level. Billions and billions of procedural atoms evolving inside the game, miraculously creating this strange gas emitting bulb-like plant. It is incredible how familiar, yet alien it looks. To think, that the developers at Hello Games had never even imagined what it would look like. To think that the creator of this game is completely unfamiliar with what exists within it...
I think there is a good chance that No Man's Sky will bring about a revolution. Not just in gaming, but in the way people think about the universe. With Sony introducing this game to millions of consumers, I think Sean Murray could be our generation's Asimov, Clarke, or Heinlein. People might, just might, even start thinking about exploring outer space in the name of science instead of building walls here on Earth in the name of fear and bigotry.

All the previews have been positive, so I'm pretty optimistic about it, but Hello Game has been abysmal at communicating with consumers. The multiplayer thing in particular has been fucking disastrous. He's both claimed there's no multiplayer and that there is multiplayer. Online stores like Steam claim the game is single player and he hasn't clarified at all.
