Summon someone or get summoned. You can set a password in settings so that only the person with the password can be summoned. Check and make sure that you have online turned on in settings

there is a hidden path on the Anor Londo elevator that leads to the lady that is in charge of the darkmoons. You need to trade in 30 for part of a trophy

I was thinking sellsword because the armor looks like his desert costume from Raiders and a whip, wasn't sure if I should start sellsword or start with a different class and get sellsword armor later. Also wasn't sure about stats and reinforcements/infusions

Is it still possible for me to level up the Darkmoon and Farron covenants when I'm already level 180? I can't platinum DaS3 in my current situation.

Yes, actually. But you're in for a Hell of a ride. Ears drop from Silver Knights, and Swordgrass drops from the weird goat demons. Both have an abysmal drop rate.
