Me and my friend co-ordinated our Christmases, I got the PS1, he got the N64.
Sure we played the fuck out of OoT, Goldeneye, Perfect Dark, Mario Kart, Banjo and Kazooie, we ultimately put more time into the PS1 with games like the Final Fantasy series, Gran Turismo, Metal Gear Solid, Dino Crisis. I don't know about X4, but I assume you know that SOTN was ported from PS1 to Saturn, and not by the original dev team, it was a hack job. SOTN could have been better on Saturn if it was developed for it from scratch.
Anyway, there's tons of examples, not just fighting games.
Radiant Silvergun was going to be released on PS1, but Treasure ended up cancelling the port because the PS1 could not take it.

Hardware-wise, Saturn was better at 2D, and N64 was better at 3D.
PS1 did have the best video codec for FMVs, though, Saturn's was iffy unless you had the video add-on that allowed the Saturn to display at bigger resolution.

In theory the N64 could process FMV better than the PS1 and 2D better than Saturn but you would need to dabble in the black art of microcode programming to do it. Also you'd need shitloads of cartridge space to make use of it.
