stealth archery is always the same thing no matter how you try to spin it. a Ranger build is the "unorthodox" archery build, where you use heavy armor, light bows and strafe enemies to death.
God Skyrim was such a piece of shit.
Sure TES was always flawed, but the way Skyrim manages to trick you into thinking it might actually be a good game at the start is the fucking worst. The terrible balance and severe shallowness of the game creeps up on you like a nasty fiend.

Get Ayla or Feindahl followers who can also train you in archery, train only your archery skill. Once you have 50 - 75 archery (and literally no other skill points) the game get unbalanced and extremely difficult if not impossible.

Okay, I will explain to you the Conjuration Stealth Archer.
This build adamantly refuses to use any actual weapons, forcing you to rely on bound ones.
So you'll need at least 50 Conjuration so you can competently use the Bound Bow spell, which is your main weapon. Obviously you'll need up to the Adept Conjuration perk for this. Also obviously, you'll want to take Mystic Binding and possibly Soul Stealer. If you have Dragonborn, you might want to use Bound Dagger for your stealth attacks until you can properly use the Bound Bow, but it's not necessary.
Next, you'll need 50 Illusion. This allows you Quiet Casting, which goes a very long way toward your bound stealth archery. That's all you really need, but if you want to go full illusion assassin, feel free to use Invisibility or Muffle.
Now you're set. With Mystic Binding, the Bound Bow does the same damage as Daedric, while also benefiting from all the Archery perks as well as the archery Sneak perk.

Try a conjuration mage, if you do it right you can beast your way to the tome for bound bow. Later invest in silent casting. Its super nasty to never run out of ammo, and to just summon your bow from nowhere. Walk into a room empty handed, fucking bow out of nowhere. Also the arrows light up so it makes the killcam 800% cooler.

Hmm, I got one for you.
How about a stealth archer, but working with heavy armor instead. Your stealth in this case is because all your enemies see is your armor, but not actually you inside, so you are effectively hidden.
In addition, you focus less on the archery perks, and more on one handed and shield perks. Those means you have to focus on being more stealthy, and get up close to your enemy to bash their head in.
Last, you have to have backup escape shouts for when you get found out by enemies and to escape. I suggest subtle ones like Unrelenting Force to push the enemy away while you run, or Fire Breath to focus their attention away from you and more to treating their burns.
This stealth ranger build works best for me, hope it helps you!

I did this exact build my first playthrough, it was the best. I used a real bow until I unlocked the requirements for the spell. Dual wielding the conjured swords is also neato.

maybe its just my TV, but does anyone else think this game has really bad graphics, even for its time? What I mean is, the coloration is weirdly dull/grey, making it hard to distinguish small objects like levels or doors. Navigating around cities also feels weirdly annoying. It all sort of seems to blend in with each other.

Maybe because in Skyrim I seem to recall having to wait a lot for your companion to finish talking and he often looked back. I agree completely. The only redeeming factor (as with every fucking TES game) are the mods. Skyrim went from mediocre to extremely enjoyable for me.

One thing I loved about Gothic 3 is how no one bothered to check how fully working physics engine will affect gameplay. It fucked melee builds, sure, but made archery fucking amazing, allowing things like climbing on any object, slowing down rushers by making them chase you uphill, or literally jumping off people's heads to get out of tight spot, or to get on top of wall, or building.
Compared to that, Skyrim's archery is plain unfun. Skyrim does not even have bonus damage for headshots.

Well it's a choice. He thinks it's best to split up, and you have that option. But if you go together, he'll share some banter with you, and eventually says "I'm glad you decided to stick around". They probably chose this method to let the player know they weren't doing an escort quest per se and were free to go off track.
