Depends on the universe and what ingredients are used to make it.
Most western fantasy games where it's medicinal, it probably tastes heavily of herbs, probably bitter.
Zelda given that Chu extract seems to be the main way to get potions it probably tastes a bit metallic, with other earthy tones. Mostly unpleasant like drinking dirt with blood rubbed in.
Shantae can chug her potions with a smile so probably like fruit juices. But given the weirdness the games can have it may also taste of squid squeezing in an herbal brine.
