Honestly, you're in for a clusterfuck. And not in a good way.
Volumes 1 - 3 are Elder God-tier and establish some of the most entertaining mysteries and characters in any VN ever. 4 - 6 work to undo this, though they're still enjoyable, and 7 - 8 are just one big cop-out.
Sorry if I discouraged you from playing it, but it's just how I feel. Umineko is an absolute trainwreck.

Okay, play G Senjou no Maou and Ever17. They're solid for beginners.
Fate/Stay Night is God-tier, but it's 50 hours long and full of purple prose. It's no wonder a lot of people hate it, but it does get good after a lot of reading.

If you seriously think Ever17 is bad by VN standards, then I have to wonder what standards you're measuring Ever17 against. Even by video game standards, the way it unravels towards the end is pretty fucking clever.
Otherwise, if the biggest complaint you have about it is some bogged-down sequences of prolonged dialogue then I think that applies to just about every VN ever made.
