I play lots of games. If I feel like playing a stealth game I go ahead and play it. I can go back to my racing game, for example, any time I want; it's not because I got bored of it or stopped having fun.
This isn't uncommon or anything, why would you ask that?

I just want to explore planets and moons and solar systems, craft, survive, discover, fight space pirates, be a space pirate, learn the lore, join factions, learn alien languages and just walk and fly around. /v/ is triggered by this though

No. It just won't appeal to certain kinds of players.
I think your statement also applies heavily to games like Minecraft and Terraria, where the mileage a player gets out of it depends a lot on the player's own creativity AND interest in said game's environment. I couldn't get excited about Minecraft or Terraria, so those games bored me to hell. I have friends that have poured thousands of hours into both games, though.
I'll probably give No Man's Sky a chance. Exploration has always appealed more to me than building.
Last game I played with the "make your own fun" approach was Elite: Dangerous and I got bored of it within a week. Not falling for that meme again.
