One decent attack window I remember from killing him on my UGS and great machete character was after his lunge attack. You roll towards him as he's lunging at you, R1, then immediately roll into him in case he does a follow-up sweep. Don't ever try to hit him more than once.

Parrying was a bit tricky for me at first in this game, but then I got the hang of it. Try parrying shield or caestus.
As for the Champ in particular, you can only parry his ONE-HANDED attacks. Focus your attention on how he grips the halberd.
I beat almost every boss with the spiked mace and no parries.
I beat him! Parried his ass. In the end, I purposely attacked him when he was waking up from the riposte, because I knew he would grab me, and the grab is followed by the leaping attack. Which leaves him wide open. So I fell into his grab, waited for him to leap, and then got the final two shots in.

Actually you can parry two handed attacks. I did it in a previous attempt out of desperation.

I fought this boss many a time, and I can tell you that only one handed attacks can be parried.

Yep, it's my first time, I'm the OP. It's possible I mistook a one handed attack for a two handed. But I can only tell you how to looked to me. It looked like a two handed attack. You can also parry his jumping attacks.
I fought him using Pickaxes and didnt have much issue fighting him, although I dont know how slow the bigger weapons are compared to it

If you're doing this as a challenge run then just git gud and don't complain.
If this is your first run then what the fuck are you doing, just upgrade a side-weapon. At that point in the game you can potentially buy all upgrade materials aside from slabs so pick a slightly less slow weapon and use it.

Currently in NG++ and I'm on my way to this guy, never challenged him with any heavy weapon on previous runs.
Reason being they leave you with low stamina for you to react to his combos, add to that the long start/recovery animations that most heavy weapons have and you're sure to be obliterated out of existence after landing 1 or 2 hits.
Get an axe or an straight sword if this is your first run.
Will challenge him with the bk great axe this time to spice the fight.

I just beat him my second time with my Faith build.
God damn that was fucking fun. I lightning staked the living shit out of him, it's how I beat him.
The last 3 hits on him where 3 consecutive lightning stakes (he's weak to lightning, at 35 faith I did 600 + damage to him with a lightning steak making full contact). Poise right through his attack with the talisman skill and rammed it in him. Best and most satisfying fucking fight ever.

Faith gets pretty fun after you invest enough points in it. Giving Oceiros or KotS a face full of Sunlight Spear for 1500 damage which also staggers them is satisfying as fuck.

it felt like it didnt have its own identity and relied on the love of dark souls 1
the pvp is also the worst in the series, the phantom hits are better than dark souls 2 but the only viable weapons are longswords, curved swords, katanas, and virtually any other fast weapon because lag makes hyperarmor useless around 68% of the time
