What are some genres that have been under-served in recent years?
I'm guessing it's not sandbox survival, puzzle platformer, or metroidvania.

Actual point and click adventure games.
Flight games
Futuristic racing games
Parkour platformers like old school TR and Prince of Persia
Falling blocks puzzle games
Rail shooters like Star Fox and Sin & Punishment
Sad thing is, probably none of these will ever come back, except for maybe futuristic racing games if people ever decide, "Wait a minute! That shit was awesome, let's bring them back."
Those old rotoscoped 2D adventure platformer games, like Another World and Flashback. Not that there were ever tons of these, and not that I ever liked them much anyway, but I think modern ones would be interesting. The closest thing we've got is Limbo.
