Bowser's Bowser Bomb move is pretty effective of getting out of tough situations like a gang-up. He's a pretty big target though.
Lucario can live pretty far if it's a stage with a high ceiling, and you could wreck shit at high percentage.
Ganondorf does pretty well too, upairs are your friend offstage. Don't use his shit moves and you may do well.

Well, firstly, be sure to turn on team attack.
Second, turn off items. You'll die because of the assists, because they'll be everywhere, and you're carefully manoeuvering.
Third, choose a small stage that has bullshit stage hazards.
Fourth, choose Fox or Bowser or the like. Fast, quick hits, then get away. Things like Bowser bomb hit noobs all the time.
Lucario is also a good choice, because you'll get damage anyways. Counter can help sometimes.
Five: Make sure to not get killed by random smashes.

Bowser, Little Mac or Ganondorf. Mac may have the best chance simply due to armour alone. Bowser will last the longest but if you're reckless you'll get overwhelmed. Turn on team attack.

but the real key is being sure to leave it a time match, not stock.
It's not going to be hard to get plenty of kills as ike, and you being only a single target will make it difficult for them to rack up points.

The more important choice is the stage you pick. Are you allowed to make that choice or not? If yes, go for something like Temple where you can try and keep running away and singling out your opponents. Naturally it helps to pick a character with a long-distance recovery so you don't end up self-destructing. If I were put in 1v6 situation against relatively inexperienced players I'd probably just trust my main LucasI have competitive experience.

Ness absorbing his teammates' projectiles heals laughable amounts of damage compared to an opponent's projectile, the only way they could win by using that strat even in a 6v1 is extreme coordination which I wouldn't expect from mediocre players. Same for Villager's pocket, pocketing an ally's object makes it not as strong as an opponent's
