I liked DQ1, it was a bit in the "mindless button mashing and grind" vibe but it was enjoyable, exploration was pretty nice, and being able to join the dragon king was something not even modern jrpgs do these days, it was cool.
I am currently enjoying DQ2, the only bad parts so far were crest hunting and your partners being a bit of a drag during the first moments they join, otherwise it's fine.

There's 4 games I would say are good starting points.
DQ1 onward to see how the series evolved. And you really should play DQ1 and 2 before 3 personally.
DQ4 is a great starting point. DS localization has issues (heavy accents and the removal of Party Chat). iOS is just the DS with Party Chat if you want to play that version. Fun exploring with a group of different people all over the world coming together to fight a great evil.
DQ5 for a more personal story. It's a really good game and plays a bit like SMT with monsters joining you and fighting with you. DS has the most content.
DQ8 is what modern JRPG should be. Has a nice open area to explore with a simple but enjoyable story to follow. 3DS has more content but some people have issues with it because it's not as good looking as it should be.
DQ7 is my personal favorite but it's a giant game that might seem intimating to some. It's very much playable if you never played DQ but you might want to experience what a normal DQ is before tackling it.

That game is longer and with less handholding than usual, you can easily screw up your character growth, miss characters and run into overleveled enemies, and has some of the most bullshit difficulty spikes in the series, as well as the hardest final boss.

Warrior 1 is literally just Quest 1 "ported" (going from Famicom to NES isn't even a port) from the Famicom to the NES, with an English localization, new sprites, some death and religion censored, and a save battery added.

There's lots or reasons for it. West has a "newer is always better mentality", and reviewers have deluded themselves into thinking turn-based is shit.
And graphics and artstyle play a huge role in it; if you're game doesn't have slot-machine addictivity from the gate over here it damn well better have AAA graphics and god forbid you have an anime artstyle (unless your game is based on a popular anime) after the 90s anime revolution boom ended.
A few other reasons JRPGs have lost their edge in general is because games now take 20+ hours to beat and all have something of a storyline whereas JRPGs back near their debut had a strong edge on the games whose story was a one paragraph blurb in the manual and could be finished in a weekend.
I'm going to play through Draqon Quest I right now, if it's actually the best game ever, I'm coming for you OP.

No, it wasn't based on Dragon Ball. It just used the same artist. And they hid Akira Toriyama's artwork all the way until the PS1/GBC games.
The series also got jack shit in marketing at the exact same time Dragon Ball Z was taking off in the west. A game like Chrono Trigger got popular while Dragon Warrior didn't. Until Dragon Quest VIII came out in 2004 and got actual marketing. Selling the same amount Chrono Trigger did.
