Its skill.
Good speedruns can have out of bounds and glitches and all the things you see in a bethesda game. But they also need to have a skill element to execute them.
Bethesda games are broken as fuck to begin with and are very easy to bug out. The "best" bethesda runner isn't as interesting as the best mario or metroid runner who has to be perfect for extended periods of time. With Bethesda "It just works".
I haven't played Undertale, but fuck that music is good. I haven't heard an Undertale theme I disliked.
