Living in the middle of nowhere/ in the south has not affected my ability to catch pokemon at all. They are all over my apartment complex and in graveyards. One graveyard i was in had two gyms and 10 pokestops in it because of all the "unique" memorials in said graveyard.

I can still have geolocation on without connecting to GPS. Not sure if the mobile network would scupper me, but I could easily block that signal if it was. I believe it would work, I've played in this mode in a building where GPS signals don't reach just using the wifi network.
