I know nothing about the star ocean series. Just got these two... Do I start with 1? Do even bother?

I recommend playing the original PS1 and SNES versions of both games, the PSP versions are remade in 3D (not very good looking 3D for that matter).
If you don't mind the 3D, it's alright as a remake.
You don't need to play them in order if you don't want to, and 2 is probably the better game, just because 1 is extremely easy for some reason.
