For your first playthrough, I'd say you're better off avoiding the epilogue, which is a nice bonus, but ruins the ending when it follows right on from the normal end. Maybe I'm just retarded, but I cannot remember a single instance of that. I remember her being an autist and accidentally insulting Yosuke as a result a few times and making cringeworthy lines like "I'll crush you", but otherwise I don't remebr any banter.
For that matter, most of the "banter" in P4 was just mean spirited and not good fun between friends at all, most notably, Yosuke implying Kanji was gay. Nobody but Yosuke found it funny, and Chie even had to tell him at one point that he was just being a prick and he should stop making those jokes. There was some banter that was actual fun between friends though, although it didn't seem like any more than there was in P3.

She also has more of a quirky side now (or at least emphasized and expanded on) to her and that's fine. Also people have pointed it out that they have made an effort to do more with her in later games, so even if she wasn't what you said she was (which I disagree with), she has more personality traits now which are present and accounted for. Anyway, all the characters have their pros and cons, and it's going to be what it is. Yukiko can be quiet and reserved, and so have the people you mentioned.

That's a P4G only line, is there anything in the main game? I won't deny that Yukiko is far more endearing in spin-offs, although I'm still not too fond of her, but vanilla P4, she had nothing, and that's what I base this off of as the spin-offs flanderise pretty much every character. It's meant to be some sort of development, but just leaves you wondering "then what have you been fighting for during all of these months, because you've had a friend since you've started.'

She then doesn't have too much going on for her during the rest of the game. She at least hacks that one time, and is the analysis character, so I can at least say she's necessary to the story/plot, unlike quite a few of the other characters - but in terms of character there's not much there.

It is a part of her character. Yukiko is also based on the Yamato Naeshiko archetype which embodies such traits.

Also she had her snarky moments in the main game. While she did went full banter mode later on. I'm fairly sure she made remarks towards Yosuke in the main game, that showcase it.

Maybe I saw more than what was there. I just remember really liking her and being amazed that so many people hated her. I saw a part of myself in her and the reaction from others wasn't too promising haha.

ayane was my favorite girl, she was pretty bland personality wise but i loved all the interactions with her. very sweet homebody type. Margret is my waifu though.

Don't bother, you don't have to go looking for the evidence, I'll probably just replay P4G before P5 comes out and I'll keep an eye out for anything like that from her.
There's good reason for people disliking Yukiko, but don't worry about others disliking her too much. I do hate her, but I also have a bias because I expected her to be the best girl, and I expected her to be relateable, but I found that that wasn't the case at all.
