As soon as you get the bow and arrows, you can open up the montain path to get the goron mask, which you then can use to get the powder keg to blow up the boulder on the first day. Thats how unlock epona the fastest. Dont worry if you run out if tine. Once you get the items, you wont need to get them again. The powder keg in particular can be bought at the bomb shop once you get the first one in the mountain
