The problemas are that it stops at even the smallest obstacle, it doesn't automatically jump over fences and such, and sometimes the automatic galloping interferes with the controls, and that the automatic galloping should follow always the path marked in the map, instead of just choosing randomly if you have two divergent roads in front of you.
Also, in Touissant, there's some very steep curves, and automatic galloping doesn't turn Roach fast enough, and more than once I almost fell down the cliffs.

The gameplay was not designed to complement the open world design of the game. This is something many big title open world games do today.
It would be much better if they made you play a random witcher.
Imagine if there was an open world witcher game where you play as a random witcher roaming different lands (hubs) that have quests with storylines that intertwine like in White Orchard and the game being designed to give you a rough witcher experience.
Traveling from town to town, city to city, looking for work to earn the little coin you get so you can keep your stomach full and rest somewhere else than the hard cold ground.
The entire witcher concept could be used so much better in this medium.

I'm assuming your complaints are inability to backtrack and all the areas being structured as though they were a web of corridors (for example, when moving in the forest, you can't stray away from the patch).
Those are in no way inherent flaws in hub-based games. For starters, the area design could have been pretty much exactly the same as it's in TW3 (the entire Novigrad being one area for example), simply with empty stretches of nothingness or unthematic non-content like bandit camps stuffed full of witcher gear (because devs felt obliged to add something there) removed from between.
Same with the backtracking problem. For example, TW1 had limited backtracking (the first quarter of Vizima and the swamp weren't closed to you in Act 3, for example). Indeed, something like TW1 or Dragon Age: Origins is exactly what I'd want to see.

The criticism of open world games comes mainly from Bethesda style open world games (skyrim, fallout 4) where the world is nice and pretty but completely bland and empty in terms of the player being able to purposefully use this setting. Metal gear solid 5 also got a lot of criticism for this, that game legitimately didn't use its open world very well as there was really no point in adding it, most of the missions were started as a result of helicopter rides to mission areas, not as a result of organically exploring the open world itself.
Witcher 3 is different because the developers actually put a lot of content and interesting stuff out in the world. It's not just special monsters, the southern part of Velen is really hit or miss, either you have level 2-3 cannibal tribes or bandits around levels 6-7 then you have a level 24 arch griffin that flies directly over the road, a pack of level 12 Wraiths and so on. Here's some things which make Witcher 3 very weak and I don't think many people can dispute
1. The combat is poor. You start off with the majority of your abilities and stick to this course of left mouse clicking with the occasional dodge or sign. It never expands beyond this and only gets worse as you progress through the talent tree and gain ridiculously powerful passives which almost make you invincible, even on death march.
2. The world design is awful. It's just the sheer volume of generic treasure chests spread 100 meters apart which makes it borderline offensive. All the chests contain the same things. It becomes even worse in Skellige when you need to navigate around clusters of sirens with the awful boat. Otherwise its generally large masses of empty land.
3. The quests leave a lot to be desired. The prospect of being a monster slayer going out on contracts seems exciting but it always revolves around simply pressing the right mouse button to follow a red trail or identify some clues. You inevitably reach the target and generally face two simple choices which have absolutely no impact on the game but might yield a few extra orens. Treasure hunting quests are even worse.
4. 70% of the story is allocated to finding Ciri. The Wild Hunt barely has any screen time which is a shame because you don't get to understand the world they came from too well nor themselves as characters. Instead you're treated to a convoy of steady fanservice with returning characters from previous entries.
5. Your choices really don't impact the game much at all. The bulk of your choices flow to the battle of Kaer Mohren and the number of variables it creates are absolutely minute. An extra character might die but you never even see that character after the battle even if they did survive so it's literally immaterial. For your hard efforts all you really get are different slides at the end of the game. A 90 hour trilogy summed up in a 20 minute ending is quite insulting

RPGs are in a decline or atleast at a stale in my opinion. Far Cry 2 did role playing better than many RPGs today. When taking on a mission in FC2 you get a phone call from your 'buddy' giving you a different option. You choose by going to one of the now two destinations. It's that action that RPG's miss today, because they give you choices locked in a dialogue wheel and cutscenes.
I've been playing Dark Messiah recently and there is this part where you can exorcise the succubus inside you. You don't do this by talking to a priest and get a cutscene. Instead you go to a church where a priest tell you what to do without interrupting you with a cutscene or dialogue sequence. When head inside lines of fire appear on the floor, objects come flying towards you and she screams at you not to do it. You have to traverse the church room to get to the alter with the holy water and all this is optional.
RPGs don't do this anymore. They just throw you in a dramatic cutscene with a dialogue wheel that make you chose by pressing a button instead of making you do the choices and it's honestly really dull.

I honestly couldn't fathom why a person would find the combat in Witcher 3 to be good. Sure it's not the absolute disaster which was Witcher 1s combat but it still isn't even remotely satisfying after all of these changes over the years.

Now you're being a bit silly. Those games have properly designed areas with a lot of variety in art assets and layout. Witcher 3 only seems to do that for Novigrad and Kaer Mohren. For Velen and White Orchard it's practically the same area the entire time. The towns look the same, the trees look the same, the roads look the same. You get to Skellige and there's a little more variety from the mountains and separate islands but every island is basically the same.
Non-linear will almost always beat open world because developers take time to create unique and interesting areas which aren't empty. That is unless a team spends enough time thoughtfully designing each different area for an open world. That has happened before.

They are actually interesting, in fact one of them explained who the Crones are, who the Lady of the Tree was and why freeing her would be a mistake.
Combat could have been way better, the concept of the fast movement and stuff is cool but execution leaves a lot to be desired. Controls don't feel as responsive as I wish they did, they should've kept the idea of preparing before battles instead of just chugging whatever whenever, and make aard and igni more powerful, while nerfing the everlasting fuck out of quen because that's just a crutch sign.

There is a counter kill actually and the space elves should more or less be the ayyylien race. But in terms of basic design structure it is a handful of quests strewn around a large area which are all of a particular type for side quests or just a main quest which advances the story. You're given a small list of tasks on the screen just like AC for each quest which you accomplish by following a neat breadcrumb trail of highlighted objects to your target. If anything AC was more exciting simply because of the ability to climb buildings and incorporating real world design over Witcher 3s lazy log cabin towns.

The only problem I had with the game is the way it completely wrote Yen and Triss off if you romanced both. I wish it gave you an opportunity to resolve it and declare one over the other. This part was very unlike the game.
I only romanced Triss so I could get her to go to Kaer Morhen. All the while I focused on romancing Yen.

The whole Djiin quest seems completely pointless in the end. What were to even happen if you avoided the quest? Yen would still be under a spell to be infatuated with Geralt.
The main issue, which SOMEHIW, most open world games these days subject themselves to, was they made a time sensitive main question. It doesn't jive with the gameplay as a whole.
