Its great. I recommend the first 2 first if you can get them, though.
Despite what people say, the original resident evil is still good and 2 is commonly considered the best. Those 2 (1 especially) are also more horror focused as well

Yes, RE3 is fantastic, though it's a little more action focused than 1 and 2, since it has ammo crafting and you are more focused on avoiding the Nemesis instead of your average zombie in RE3. I think that actually makes it even better than the others but some people disagree.
Honestly though if you play RE3 you should play RE1 and RE2 as well, they all should be able to emulate on Vita well by this point. Get all 3 anon.

no don't worry about playing 1 if you have played REmake, you know the story, that is the only reason to play 1 for. 1 is incredibly dated and low budget compared to 2 and 3.

It's good, Nemesis basically follows you in the entire run and game will have some choices (on hard mode I think) which make the plot slightly different
Shotgun doesn't take 2 slots in inventory so it's a nice change, though guns don't have upgrade parts, some places will spawn random zombies so be careful
