They were just weak, I don't really think they were garbage. Some of them, like the Fool's Idol weren't very cool though. The levels themselves were a lot more difficult, and I think it's overall a harder game. You'd just do so much damage to the bosses, they would die so easily. You could also shred the boss's health pretty fast in Dark Souls too, though.
Both good games, but I really liked the world in Demon's Souls. The first world was pretty neat and I though Ostrava was cute

How was Fool's Idol not very cool? It's one of my favorite bosses in the series for the design and atmosphere alone, that music is unsettling as hell and actually matches the boss itself, doubling in tempo in the same way she doubles herself.
Leaving a kind of moral choice up to the player, whether to kill the conjurer or not was a really unique idea as well and a neat oppurtunity for players to decieve each other with the messaging system.

Flamelurker, Punisher, and Maneater were pretty tough bosses. I was getting my shit pushed by Maneater by NG+3.
The rest of the bosses may not be hard but they had really cool and unique dynamics to them. Every time I go after Phalanx I fin a different way to beat him.
