There are a few that's similar to Daggerfall/Arena, and I think a few of the more well known series that had full 3D ones, not sure how open world though, stuff like Wizardry 8 and shit like that.
Not really an RPG, but I'd say Stalker series. You've got your stats, quests, yuuge world, all many kinds of interaction, etc.
I think there are also mods to make some Gothic games first person.
