It's a visual novel, the bartending is very basic.
I loved every single moment of it, but I can understand why some might dislike it.

The bartending uses fake ingredients but you have to take the customer's tastes and past orders into account when serving them. Usually, if you've been keeping jill happy and not distracted she'll have hints on what she needs to make, but a lot of times you just have to remember some drink trivia mentioned earlier in the game.
As far as mixing actual drinks, though, this isn't that game. This is more for the experience and the atmosphere than mixing.

Buying Jill shit will basically have her remind you what drink just got ordered - or hints at what might be desired - but you need money to pay taxes and rent so keeping her "focused" get riskier and riskier as you go.
Making drinks isn't very hard since there is no countdown and you can redo a drink as long as you don't serve it with no penalty.
The subtleties of bartending here are switching their orders for a (hopefully) better suited drink or adjusting how much alcohol you put (some people will quit drinking if they feel they're getting dizzy too fast, other will get positively shitfaced and be a blast to watch).

dev knows his audience, but huh, next time, no more same scenario, make a setting where the character changes places, like point and click or something, reading stories in past tense and 3rd person just isn't has good

I never found one and it is a really big oversight for a Visual Novel. At least Ctrl still works for general skipping though.
You can usually guess where the dialogue changes though since the drink choice you make is the main things that change the dialogue, so just click normally a few times at the start of shift to see if the character that turns up says anything new and Ctrl though to the next drink mixing if it is the same and then repeat after each mix. Can also scroll wheel up to read through things if you spot something you might have missed.
