The characters I've enjoyed the most is characters that barely mention Sex. Stella, Kira Miki, and Sei. Alma is also a good character when she talks about things other than her sex life. Sex talk is fine and all, but when Alma talks about hacking or her family, she is 100% more interesting.

depends. If you got the financial means to make it a swanky as fuck place that only seats along the bar, sure, you can go fully into talking with people on a very 1-on-1 basis. But you'll most likely be bleeding money.
But unless you're in a nightclub or some very touristy bar, you'll get regulars if your bar isn't complete shit. And during slower times or between rushes, you'll have plenty of time to strike up conversation. And if you have enough charm, you can get people to sit, drink 1-2 drinks while exchanging small quick talk, they loosen up, maybe talk with other patrons, and by the time you serve them their 3rd or 4th drink, they're pretty much gonna be there for a good while or even become a regular.
But when it gets busy, you need to hustle in making drinks. Unless you're some legendary spot where people are willing to wait 4-5 minutes to get served and another 4-5 minutes for their 1st drink.

Holy shit so much this. The game desperately, desperately needed some form of choice or interactiveness. Simple dialogue choices would have made the experience a fuckload better.
I mean, for fuck's sake when I first read the text "you can add as much alcohol to the drinks as you want, it doesn't alter taste" I was like "oh sweet, so dialogue will change based on how drunk the npc is? Neat" and yet I fucking maxed out the alcohol when I gave it to the slicked-back hair guy and there was zero difference. Right, but many visual novels include dialogue choices to make the game more immersive, interactive and enjoyable. In my humble opinion, VA11HALLA would have been much better with dialogue choices, or simply including other elements of choice besides simply selecting drinks.
It would have been really, really neat if you could select what small talk questions to ask your customer, and depending on your dialogue choices you'd get different amounts of tips. That worked amazingly well in Alpha Protocol, where if you selected professional responses to the serious CIA leader he'd react favorably to you (which changes cutscenes later in the game) and every character had their own preference.
Instead, VA11HALLA was quite a monotonous experience and unenjoyable for me to be quite honest, however I wholeheartedly wish those who enjoy the game to continue discussing it as I don't wish for my criticism to dampen the spirits of others.

The drinks are the dialogue choices. You can basically cut yourself off from someone or change the topic by screwing up their order or adding more alcohol to some drinks and getting them dunk can change change the conversion revealing more about the person. I actually find it a pretty neat way of tying choice in to the game, which is actually relevant to your job, without having blatant dialogue choice lines. It kinda makes the bar sections flow better for the most part.
It would be nice to have more depth to it (like having the quality of the drink being an influence), but it is serviceable.

If you are looking for a bartending gig, try showing up in the basic attire: black shortsleeved button-down collared shirt, dark jeans, clean-looking shoes (anywhere from dark walking shoes or loafers, lether not a must), and you should pass the bar.
Look up bartending courses or classes, and it wouldn't hurt to get a diploma, although practical skills matter the most. Buff up on drinks and have a good attitude, look in to the eyes of your employer/customer, basic manners.
Best chance of breaking through is asking staff if they need someone to cover or do odd shifts every now and then, casually mention any experience, and you should kick it off from there.

There's a bar franchise that only exists in three states that I go to that's very comfy. It also doubles up as a burger joint that's ranked in the top 50 in the US. Usually if you go on a Monday or Tuesday you can have 1-on-1 conversations with the bartenders. The atmosphere is pretty good despite it being a tad cramp.
