I've spent probably more hours on KoL than on most MMOs I played and I still don't understand shit. I doubt anyone does. The players who are really into cutting-edge ascension speed are sentient spreadsheets.
But it's fun in the way that watching numbers grow and obsessively collecting pointless shit you don't need can be.

Discovering neopets right before I hit puberty probably ruined me as a human being.

You get 40 turns a day you get to spend on adventures going around different areas, killing monsters, completing quests.
You can cook food with the drops you get, or mix cocktails, to get more turns, as long as your stomach and liver can handle it.
Once you completed all the main quests, you get to start over while making one of the skills you learned permanent. You can pick a new class if you'd like.
The game is text-based, you have drop-down menus for items and skills.
It's pay-to-win as fuck but the current restricted path (dubbed Standard) limits the "paid" items you can use to those that came out in the last 2 years, meaning it's not as onerous as before to really get into the flow of the game. You can always farm meat (the game's currency) to buy those items from other players in the mall.
Optimizing anything requires spreadsheets and more spreadsheets, pretty much everyone who plays actively uses an interface called KoLmafia that automates some of the tasks for them because there's way too much fucking stuff to do and remember.
I wouldn't call it fun but as a timesink, it works. It really really works. Goddamn the time this "game" can sink.
