You are probably mixing for too long. The game isn't obvious with it at first and only mentions later that mixing for more than a few seconds is called blending and ruins drinks that don't need it. Just cick mix and unmix.
Otherwise you can't really fuck it up unless you are usin too much ingridients. There are normal sized drinks and double sized drinks, that's it. Optional alchohol means any amount of it though.
