There's some logic behind the ingredients. I don't have the post the dev used to explain it, but I remember Adelhide was for sweetness and Karmatrine is the alcohol.
I don't have any way to answer you on the way the drinks affect the way the discussions play out. I think it's mostly just alcohol content but it's possible there's more, I have no way to know since the demo isn't that deep and the prologue's mechanics were mostly tossed out when they changed engines.

For the most part its just a VN, but when you get to serve drinks you, well, serve drinks.
You will get the recipes on every drink, just match what you need to mix and whether it needs to be aged or iced. If it says "mixed" or if it doesn't specify, click the Mix button for a couple of seconds, if it says "Blend" then leave it mixing until the container starts shaking faster.
Also in the prologue for some god damn reason the button says "On the rocks" but that means it has no ice, but when you click it so it says "No ice" THEN its on the rocks, I hope they changed that for the final version of the game cus it confused the shit out of me.
