So after seeing these threads, hearing about NV for ages, which included getting a good chunk of the legion spoiled for me, I finally sat down and played it. I finished it last night.
I really enjoyed it. Vegas, the Legion, House, NCR, absolutely loved them all. I went with the Yes Man route, seemed to fit the character I made up, plus Yes Man was fun to talk to. That scene with the NCR General was gold.
Too bad about the bugs though. Even after installing the bug fix, I still saw several graphical and gameplay glitches. But I suppose thats Bethesda/Obsidian for you.

Deathclaws can be a pain in the ass as an unarmed build.
I'm level forty now and ended up maxing out both unarmed and melee. You get some perks from melee that affect your unarmed abilities too for some reason, such as unstoppable force and whatever the knockback one is. I recommend it, being able to knock enemies down and stun them for 30 seconds with Paralyzing Palm has saved my ass a few times.

Fallout 3 had a much, MUCH more interesting map. The story was a little better, but that's because New Vegas's story doesn't hold together very well. I'll agree to it being more challenging as well. FNV is a walk in the park except for the death claws and cazadors.
I just hated the gunplay, the choice of weapons, and the green tint. Fallout 3 being more urban also made the clunky engine way more obvious than in New Vegas. New Vegas won me over instantly when I found a single-action revolver in the very first building you're supposed to enter. That, the desert motif, the thought of getting revenge on the man who tried to kill you, littler things like the Veteran Ranger armor, gambling, and having a choice in factions to join all made me grow to like New Vegas far more than 3. A vault dweller looking for his father just didn't have the same appeal.

And the story needs you to believe that Caesar's Legion is any kind of threat against the NCR, and that Securitrons are any kind of threat when pulse guns are a thing. As someone who liked Fallout 1, 2 and Tactics, but absolutely despised Fallout 3, would it be worth my time to even remotely look into Fallout New Vegas? People seem to think it's quite different than Fallout 3, but I'm not sure if it's different in a way that'll tickle my fancy.

NV is much, much better than 3.
I played 3 for 20ish hours before dropping it halfway through, and a year later picked up NV and played it straight through. The roleplay, writing, perks, characters, exploration, etc etc are all so much better.
Plus you can get it pretty cheap these days.
Major downsides are it looks like hot garbage, and it's buggy as shit, but mods fix it mostly

I got into the series 2 years ago and when I did I played from Fallout 1 to new vegas. Fallout 3 was the biggest piece of shit made painfully obvious from going from the quality of the originals to 3. It was such a mediocre game and the story so predictable and cliche there was no joy in beating the main story and the expansions. It was utter fucking shit, I'm convinced that if anyone truly likes this game they must've played it when they were 8 years old. Only with that nostalgia goggles can someone actually see something other than a piece of shit that completely missed the point of Fallout with terrible writing, awful character and gunplay that is so boring it literally makes you think of oblivion with guns.
It's obvious that Todd did not give a fuck about the original series, because 3 was a truly terrible game.

I made the unarmed run once. Begining is tough, but it all pays out when you're the damn Kenshiro of Fallout, exploding things with your punches. Late game when you go toe to toe with Deathclaws and kill the shit out of them with your bare hands (well, your gauntleted hands) is really fun to do.
