Fucking around with Buu was part of Vegito's plan. He needed to get Buu angry and desperate enough to try absorbing Vegito so he could free his sons and Piccolo before killing Buu.
Gogeta did the same thing in GT (inb4 >GT) where he trolled Omega Shenron into making that negative energy ball thing so Gogeets could turn it into a positive energy ball and fix the damage the Shadow Dragons did.
Gogeta didn't fuck around when fighting Janemba because he had no goal other than killing him.

Not him but Vegito'ss plan resulted in him getting absorbed so he was able to save everyone who was inside buu. Toriyama is a dumbfuck so he let them all die after that instead of having Goku take at least Gohan with him using instant transmition.
