Got pissed off that Paladin was locked as a tank only, and quit 5 minutes into it. Wake me up when an MMO portrays paladins correctly (read: holy warriors that seek out and eradicate evil, not fucking tanks or healers).

SkyUI is by far the most popular UI overhaul to eliminate casual console shit menu designs.
SkyRE, PERMA, Requiem, and one or two others I'm forgetting are Overhaul mods, completely changing the way the game is played (usually to make it harder in some fashion; once again eliminating console casual bullshit).
Requiem in particular is known for being balls-bustingly hard. The game becomes an actual RPG and not an action game, and if you suck at combat you won't get far.
I will say I'm absolutely fucking sick and tired of how all the mod makers seem to have a fetish for bow & arrow ranged combat. They always make it stupid OP compared to magic or melee.

Some other minor shit, something that made towns bigger instead of Bethesda-sized.
CCO gives stat mods baqck over to races/genders, and you can pick major/minor skills again. When paired with SkyRe, you have actual skill+perk choices instead of just spamming light armour and the same weapon, not to mention pure destruction actually has solid enough damage to be worthwhile. Also makes combat a lot more one-hit-kill. Learn to fucking block.
Deadly Dragons and DCO make dragons tougher, mostly because SkyRe doesn't touch dragons at all so they need the upscale. DD makes them tough, DCO makes them play smart.
RNaD and FF are those immersive "eat food, set up a tent, etc" kinda mods. It's comfy as fuck. FF also meshes with SkyRe's perks etc.
Apocalypse spells is for extra spells. Nobody wants to just spam fire/ice/shock beam/blast and call it a day.
Interesting NPCs has just that. They're on the whole very well written and its still a tie for Best Companion between the argonian knight and the headless mage. Birds of a Feather is probably a better sidequest than anything that actually made it into Skyrim.
None of these mods actually fix the worst part, which is the main story being kinda weak and there not being enough crazy "Elder Scrolls"isms in the game, but they at least make characterbuilding actually engaging and exploring actually fun and rewarding.

go to the tesgeneral website, it has a good guide that covers all the basic stuff that you need. If you are too lazy for that, than here is the absolute minimum required:
SkyUI
Deadly Combat or Ultimate Combat (or one of the many combat mods)
Perk overhaul (SPERG or Ordinator, I prefer the latter)
Apocalypse Magic, Forgotten spells and a bunch of other magic mods
Better Vampires or Tales of Moonlight, depending on whether you want to be a vamp or a werewolf
this is the absolute minimum, there are dozens more mods that I cant play without, but these will give you a solid foundation
