What are some games where I can convoy around possibly hostile territory with my friends, just hanging out and fending off the occasional attack by other players? I dont care if we're on horseback with swords and magic, in humvees with guns, or spaceships with lasers.

Albion online is pretty good at that.

There's GTA Online. It's shit but it's good for what you're asking for.

I've actually been looking at project reality a lot. I know its got a logistics system in there, but how important is it? Do you actually have people running convoys and guarding them, with other people trying to ambush and destroy them?

From what ive seen the space trucking in EVE comes in two flavors: autopiloting through highsec and autopiloting through friendly 0.0. Is running a convoy of transports/ships to guard them through lowsec actually a viable way to play the game?

Arma 3 can do this

It's super important, distances are pretty big in PR so you have to build forward operating bases (FOBs) that allow your team to spawn. You build them using supplies, supplies can be provided by supply trucks or transport helicopters. Teams have a limited number of these so they have to coordinate very well where to build the FOBs.

Usually dedicated squads play transport/supply roles, They just fly/drive around the map for the entire 2 hours dropping more fresh bodies/supplies into the fight.
There's also a gamemode called Insurgency which is what OP literally asked for.

The other team has to find terrorist weapon caches scattered around the map. At first they don't know where they are so they have to patrol around the map and kill or sometimes arrest terrorists to gather hidden "intel points". Once they've gained enough of the point an approximate location of a weapon cache shows up on their map.

It's a lot of fun, depending of the map. Works best in urban maps but is kinda shit on deserts or maps with low amounts of cover because of the asymmetric team. The terrorists have to rely on traps, IEDs and suicide bombers while the coalition forces roll around with tanks and attack choppers.

I think that was the purpose of Rust, but it's been a half-assed buggy pile of hackers for years now. Garry Newman has no fucking clue on how to make a game from scratch.

Project Reality is probably pretty close to that. Nothing better than just escorting Logi Trucks in a Hummer to the front line.

Seconding this
There are entire gamemodes dedicated to just rolling around with friends in a humvee or APC and lighting up enemies as you pass by.
