You get the bonus of being able to set up positions and wait for the enemy but at higher skill levels, the attackers just group up as 6 and combine ults to try get in
They're still disadvantaged in the fight, but they only have to win once as opposed to defense, who have to win every single time to ultimately be victorious in the end
I've seen and pulled off some miracle saves as lucio, genji and mei on the point but those happen rarely these days, everyone is too organised even in random pub lobbies

Her primary fire is an ambush tool. It freezes you in place so she can finish you off easily. Her secondary is a long range sniping tool or a finisher that can one shot many characters with a headshot.
Her Ice Wall ability is used to trap people or otherwise isolate them so she can safely freeze them. It can also be used as an escape tool for when she's roaming the map looking for people to ambush. Her Cryo-Freeze can either be used to draw attention before freezing herself as initiation in a team fight or as a way of drawing a target back into your own team to survive a failed ambush.
Her ult can trap an entire team when she attacks without being noticed, or as an escape tool. Either way, it will result in a lot of frozen targets that she or her team can freely headshot.
Her kit makes her a very offensive character. And as I said, you can tell the devs didn't think people would use her that way. Judging from your post, even you haven't.

I ain't a very good Genji but I know the general tips to play him properly:
- use mobility to your advantage all the time, you're doing it wrong if you're on the ground for too long
- do not engage at melee/close range very often, a lot of your damage should be harassing from medium-long range with the shuriken
- try to save E for opportune moments like Bastion or Soldier's ult
- don't Shift in unless you're pretty certain of a kill because if shit goes south when you're close you gotta use it as an escape move too
- don't forget that RYUUJIN NO KEN WO KURAE doesn't increase your hp at all, you're still squishy and the damage from the blade isn't quite as great as some may think; use the ult in generally the same manner as your normal play--sneaky flanking when the enemy is focused elsewhere

In general, try not to be "that Genji". I would classify him as a harass character. Annoy and take out back line enemies if possible, and return to teammates if they need help. Just avoid getting tunnel vision and target enemies who are giving your team troubles!
In the case of tracer and pharah (I am assuming you are talking about when you are alone with either one), run away if you must, kills are not always necessary, and even distracting other players can help.
