You'll be fighting in the main game. The options screen allows you to enable or disable auto aim and the HUD options states in the description that it's for showing or hiding your remaining ammo. First, get all three variations of the phone ending. On your fourth run, get the phone ending again but leave the room while hugging the walls so you don't get hit. Continue hugging the walls and pick up the dummy finger and the VHS. Watch the VHS and unlock the drawer with the axe in it. Watch the VHS again until you've seen all appearances of the ghost girl. Be sure to pause once after every appearance (be careful because if you mess up the timing on this part you will have start over entirely). Get the key, and then pick up the axe. Open the microwave and then swing your axe at what's inside. This will unlock the true final stage of the demo.

Tried it.
The key does not appear and you have to watch it again from the beginning to the end to trigger the note to appear near the TV (which also means the key).
You can unlock the cupboard in the VHS world, stop the video and then get the axe in the present.
You can also then restart the video and don't open the cupboard.
It remains opened in the present.

I have no way of verifying this (outside of proving that I attended the expo), but I played the E3 2015 PlayStation VR (then still referred to as Morpheus) "Kitchen" demo, which shows this sequence in its entirety. I'm going from memory and some events may be off (anyone else who was at the expo, please feel free to correct any errors in my description). Spoilers obviously. Here's the gist of what happens after Pete is killed:
The player's (Clancy, assumedly) chair is knocked over in a struggle and Pete is dragged out of the kitchen, down the hallway you see the zombie girl in. At this point, you're looking around while laying on the floor. After a few moments, his severed head rolls out next to you. You can hear the zombie girl breathing and moving around, and then your chair is suddenly uprighted. You can still hear her, and she slides her hands around either side of your face from behind, seemingly examining you. She then leans over from behind you, her face suddenly appearing upside down right in your view. She switches around to the front, now in possession of the knife that Pete had. She stabs you in the leg with it, and as Clancy is yelling in pain, she suddenly lunges at you violently. The demo then ends.
