As another one of those think this is an OoT sequel in the Decline Timeline, I think it's among these:

Being the next Gerudo male makes the most sense to me, with the additional possibility that he's the current Sage of Spirit.
In this theory, Ganondorf is too busy being trapped inside the Sacred Realm to be this old man. The King is possible, but his skin is just too dark to be the tan of a Caucasian man (unless he's super obsessed with bronzing). Simply being the next Gerudo male in line solves a lot of that.
His goal can lean either toward good or evil. He may be helping Link because he hates Ganondorf for ruining the identity of the Gerudo people on top of it possibly being his duty as a Sage to help Link (like Rauru). Alternatively he may admire Ganondorf as a hero to the Gerudo, holding similar sentiments to what Ganondorf expressed in Wind Waker. So he's trying to get him out and use his power to take over Hyrule. This backfire surely because Ganondorf abandoned his people in OoT

It depends on how far they're going to go with the durability stuff. I could imagine them putting special item in the game that can't be broken and stay with you always. On the other hand, they've made the fire rod have durability in this game and so there's a ton of them in the world. So either way.
Even then something like the Roc's Feather or Pegasus Boots could just be in the game as potions that increase your speed and jump height. Kind of depends on the way they want to go with the potions too. With the kind of depth they want the crafting and cooking to have, I'm sure there's potions for tons of things.
But like the way they want to have multiple solutions for things, who knows? Like to protect you from the cold, you can make a potion, eat spicy food, or wear warm clothing.

The Hero's Shade isn't the child Link sent back in time and grown up after Termina. Well he kinda is the only Link who did not had a personal reason to do what he did. Links from the classic games where lived on a world turned apart by Ganon or in times of crisis. TP, WW and SS Links all had someone to protect first but in the end kept going because the stakes where to high.

The HD textures look a million times better than any fan mod (as usual, fan texture mods are garbage most of the time), but the new lighting engine really fucks up the cell shading a lot.
