It's not about how much of a blank-slate Link is. Hell, the blank slate idea hasn't been too relevant since he's started showing more personality in Wind Waker onward. Hell, he's literally called Link now, so the name angle is pretty much gone, too. It doesn't matter, though, because he's still one of the most recognizable heroes in gaming.
It's understandable why Aonuma would say the simplest method would be making Zelda herself playable. It has the potential to keep both archetypes the way they are. Link is still Link and Zelda is still Zelda. Making Zelda a man or Link a woman would change their design and character, no matter how much of a blank slate they may have been before.
They could easily make Mario have a long-lost sister that can play the same way as he does, but that doesn't suddenly mean it's a good idea.

It's about icons as well. Link is a gaming icon. While canonically it's generally a different Link from game to game, he's recognizable as the same "character" to the vast majority of the populace.
Having an iconic, immediately recognizable character is important for brand recognition. You could drastically change the art-style for Link, Zelda, and Ganon in any number of ways and depict them fighting and even the stupidest of gamers would see it as "Hey, new Zelda game."
If you swap the genders, they become less iconic. A female Link adventuring, a male Zelda being support, and a female Ganon fighting the female Link would be recognizable to some, but it wouldn't be the same, immediate icon that their normal genders are. Swap the artstyle along with the gender and people wouldn't immediately say "Hey, new Zelda game."
This is why icons don't get gender-swapped.
