You probably aren't missing anything crucial. The thing about Paradox development studio formula (or pausable real time games in general) is that there are periods of peace during which nothing special happens and only on occasion you have the resources to do stuff, while when you get really big or if you engage in war, you might have to reduce the game speed or pause it from time to time in order to issue orders.

There isn't really any correct way to play the game aside from making your country stronger any way that you can. If you're new to the game try Ottomans (insert obligatory kebab joke) as they are in a very good position to do basically anything but colonization and they have several missions that give you a good idea of what you should be doing.
