The whole game is shades of morality. John is sent to kill his old friends and essentially was only one misstep from still being one of them.
At the same time the government official sending John is corrupt, and abusing his power to send John on this journey. However this doesn't change the fact that all his friends really are outlaws who have committed horrible crimes and need to be brought to justice.
John wanted to have a clean slate and do honest work. But he had committed the same crimes as all the rest. In his new life he would be one of the people he formerly robbed and killed.
John dies to give his son Jack who had an education and something of a family a new and better start.
Jack becomes a murderer to kill the now retired official who killed his father and becomes the outlaw he never wanted him to be.

Except it is. We're unlikely to ever get a continuation of Jack's story since the wild west was dying when he became an adult, and would've been totally eradicated by the time he reached John's age. You're not forced to go around killing people and robbing banks as Jack unless you want to, his story ends with him avenging John. Anything that happens after is conjecture, and the book he wrote is all we have to go on.
It's not a lot, but it's much more likely that he followed his dream of becoming an author after killing Ross than it is that he just became an outlaw for the five years he would've been able to before that kind of life just stopped being possible.

You have the option to decide how Jack's life progresses. You can not do the final quest at all if you want, and just pretend it all ended there. You can duel the guy that got your dad killed, which in itself isn't illegal or particularly wrong. (at least back then dueling was more of a neutral thing, I doubt anyone would've gotten the law about two men dueling on even ground. The dude agreed to duel you after all).
You can also go full revenge and kill everyone who was involved in the killing of your father. I personally burnt the dude's wife with a fire bottle and shot him to death by the river. Then killed the witness and went on living a life of killing lawmen.
But the fact is you get to choose, and it's not like the game forces you down a particular path. So really you are allowed to make your own redemption. Since you played as John the whole game, you get to decide which of his messages stick with Jack. Either you can try to forget and move on, or you can let your emotions get the better of you. You can kill the last enemy or simply move on.

It's called what it is because the diary was found and published after the war, and the title itself doesn't imply that it was written and published by her, only that it was HER diary. Red Dead was written by J. Marston, which could only be Jack since John could barely read, and we know Jack loved to write and read.
