I have a survival server running 1.8.9 for me and some friends, pretty fun, have been running for 3/4 of a year sometime this month, have even been getting some infrastructure built at this stage and it is getting pretty big. we have 3 beacons too
this is our main beef farm, also got chickens and some grain and stuff, and one of our beacons
we have connected this base, that is on a island, through a tunnel with double rails that is between 2700 and 3000 blocks long, to another base with another beacon in a roofed forest, there is also a cave in the middle we have cleared out that we plan to use as a cross road and train station

Maybe you don't recall, but that was at one point the entire gameplay. Explore, mine, craft, build, repeat. It's just that it used to be much more open-ended, you weren't forced into a certain mode of playing. You could do the nomadic style, or build up settlements, and you could even make some silly choices in how you did things. Maybe you were a hunter who only went after spiders and always used a bow, for example. That kind of thing is still possible but it's hampered by the need to have a consistent source of food. The game was much more open to interpretation before, now it's pretty much locked into building shit.
As for whether or not the game is actually fun to play, you have to remember that it used to be both novel and promising on top of being a fotm. There was reason to think that the game might get more meaningful content added to it. The halloween update ended that dream, after fully demonstrating that notch was a lazy shit who can't actually do things correctly. Then he let other people take over who just shitted up the game with useless bullshit because they didn't have any kind of vision. Notch appeared to at one point but gave it up once the money started rolling in.
I can't say I didn't enjoy the indev/infdev ride, but seeing that it's devolved into being interactive Legos, and ONLY interactive Legos, has really soured the idea of going back to newer versions or playing the live game.

and, you can carry seeds with you, there are skeletons in caves and dirt, that is all you need, as you grow grain for bread you will get more seeds than you use so it is 4 stacks in your inventory, taken, tops, 1 for bread, 1 for grain, 1 for seeds and 1 for bone.

the combat became easier only because of enchantments, they recently added a combat update to make it more of a challenge and also introduced shields.
I am on the fence about updating our server to up (currently version 1.8.9) but if all players on the server beside me wants it then I'll upgrade
I really do love the fact they added enchantments, how I see it, there is nothing stopping me from playing like you, but it is impossible for you to create on the scale we do, at least without mods

emeralds are used as currency in villager trades, you can also rarely find them in mountain biomes
the mod anon is talking about (Tinkers Contruct) introduces introduces most of the ores, including emeralds, in a liquid state to be used by its smeltery, which allows you to melt ores down so you can pour them into casts to form tools/weapon pieces, ingots, etc

Not sure what enchantments are, I never used them. Only noticed that since 'release' the enemies die in less hits, and the skeletons shoot less often. It used to be a real threat when those fuckers showed up and you had no bow. Now I can kill them without even using a weapon. Shields sound cool though, I want more like that.

The fact that they changed things over the years does make a difference. My style of play is more difficult or impossible to execute because of arbitrary meters I have to fill, and the game is less fun because monsters don't even pose much of a threat. Fuck, I remember infdev hard mode when you'd get mobs of 8 creepers/skeletons at once, and those guys would fuck you up/fuck each other up with infighting. The modern setup is pitiful in comparison.
