They're actually really fucking easy. Gunfire will make the olants "explode" temporarily (there will be a small burst effect and the plant part will go darker. Pay attention, it's subtle!)
If you do that you can go in for melee for some time without having to fear anything, they will be staggered normally. After some time the plant will revive without prior warning, so make sure you experiment with this and learn the timing.
With Dante, charged shotgun is the fastest/most convenient way to disable the plant IIRC. Charged ebony and ivory works well, too.

DMC4:SE and DMC4 vanilla blew the reboot out of the water in terms of sales and Itsuno is still working at Capcom "on a new project" as of January this year
I have a great deal of faith in Itsuno because he does good work and he and Hiroyuki Kobayashi are like the only talent left at Capcom.

DMC5 will be revealed at Sony's stage. Will be PS4 exclusive. Sony are backing/co-publishing it (at least in the states) as part of a larger deal done years back with Capcom which included SFV deal & Deep Down (which will also reappear this e3)
