The exaggerated characters of the playstation games tend to be what people see the characters as, because they are more fun that way. Yagyuu's exaggerated character drops any everything but her lust for Hibari, which people probably find annoying.
Basically, the PS games tend to emphasize what people like about characters, except for Yagyuu, for whom it emphasizes what people hate about her.

Just got Estival, and honestly I'm regretting it. I hate how the lock on system is only for the camera and doesn't affect which way your character is facing. Speaking of the camera, it's way too wonky. And I hate how it locks you into (usually lengthy) animations. Ikaruga is ruined because of this bullshit with her putting her sword away constantly. Not sure if it was like this in Shinovi as I never played it. But Burst was so much better than Estival so far. Even the story seems worse.

It's not really Infinite dashes as it is their dashes have a shorter cool down.
You'll find that harder hitting characters like Katsuragi, Daidoji and Yomi have a mush longer cool down on their dashes, making them slower characters.

As it is, I don't think either of those are possible. Changing the hair length would require the ability to replace models (AKA be able to add our own custom hair styles and clothes), and changing Daidouji would require somehow completely making her model unique in terms of structure (which I think is impossible).

Because despite being a serious older sister type in the 3DS games who occasionally obsesses over Hibari because of her lost sister she ramps it up to 10 in the Sony games where she just won't stop stalking, babying, and generally lusting over Hibari to the point that most Hibari scenes are ruined due to Yagyuu being there. You can't have a decent scene without Yagyu "coming to her rescue" and then talking down to and babying Hibari, and it takes Hibari shouting at Yagyu to stop being so obsessive for her to get any decent scenes since it means Yagyu will be hurt for a while.
It's why you get some decent scenes with Hibari in SV I think it was where she's alone and having that doubt of wondering if she's an actual good shinobi, if her friends are her friend, and so on due to her eyes, and she fights Gessen girls and gets some actual good scenes.
When Yagyu gets scenes with Mirai she actually is a fun character but that almost never happens.
How exactly do we get Flash/Yang/Yin up?
All of the characters I play have A lot of yang, a small bit of flash, and no yin
I was also confused with SK Burst but I never really cared enough to do that
I started playing for Mirai. I had heard some people didn't like her playstyle. I don't know how they could think that, she's lots of fun. The only thing is, so far everyone else I've tried has better Ninja Arts.

Flash is the normal uniform style you start out a fight with. No transforms
Yang is the transform state with the outfit/Shinobi Transformation you usually hit the left bumper to do it.
Yin is hold Right bumper and press strong attack. It's called frantic mode you deal more damage but take more too.
Anyways you just use them more in battle to level them. I tend to just use one mode the whole battle if I want to level it.

Lack of AA mainly, something that can be easily forced via graphic card driver settings on either brand. Also if you wanna get fancy turn it up to SSAA or FXAA with shaders instead of just regular MSAA. Seeing as it's a pretty basic cell shade and flat texture models MSAA would be pretty much the only thing to slap on it.
