People usually considered Kirby strong because he can casually split a planet in half during a minigame, and most of his opponents tend to be Eldritch Horrors and godlike beings themselves. One of his recurring antagonists is Zero, a being of pure negative emotion that will exist as long as unhappiness exists. Kirby killed him, but he revived himself and created a planet sized mass of Dark Matter (more or less pure evil in material form) before Kirby killed him again. There's also the fact that most of Kirby's more recent villains have "soul" forms that when defeated imply Kirby is eradicating their souls. In one game Kirby's cake was stolen, and during his rampage to get it back he killed the lord of the underworld.
The most recent game has come out and said Kirby has outright infinite power.

I'm pretty sure most people are talking about lore power levels. Sure the actual fights are easy as far as mechanics go, but in the game's canon these guys are a pretty big deal. Quick Man may be a tough battle, but the fight between him and Megaman didn't blow up half of the moon like, say, Kirby vs. Nightmare did.
You know how there's a huge difference between Cutscene Dante and Gameplay Dante? It's basically like that. Some games just have big discrepancies between their lore and their gameplay. Take, say, Mass Effect. Shephard shoots someone in a cutscene and they go down in like one shot. Shoot the same person during gameplay and they take hundreds of bullets like they're nothing. Skyrim has you kill Alduin, the guy that's supposed to literally end the world, but in game he's just another dragon.
Kirby just has a bit of powerful lore behind him that isn't necessarily translated into gameplay 100% of the time.
