The middle game in your post is Morrowind, which I would 100% agree with.
Yeah, each game goes from completely stat/chance based to completely just an action game with RPG elements.
Kind of like WoW. Each expansion just got more and more casual to the point now you literally only have 1 stat in the new xpac.

I made the same mistake with morrowind trying to play it like oblivion, you need to use weapons you're skilled at.
Honestly just use magic, melee isn't worth it and you can make spells that kill every enemy in 1 hit in the first few hours of the game.
