Many things depend on the potency of the potions, the strength of the knight and how limited the potion seller's wares are. We are not even sure whether the knight had enough resources to pay for the price the merchant would have wanted were he willing to part with his wares.
But I think the moral fibre is that the knight was just too weak to handle his strongest potions. Surely the potion seller has more experience on hand. He has presumably sold all kinds of potions to all kinds of people and learned the hard way that some potions are just too much for some people.
Considering that the mere potions can do everything the knight can, the knight is very badly outmatched in the lore power ranking. The potion that can do everything the knight can is probably even not close to his strongest potion, but imagine the knight being sold even it. He would have a hard time moving due to all the extra strength and speed. He might even hurt his own body by giving out strikes strong enough to shatter his own bones on impact.
