Literally impossible. I can't do any damage to this boss. Do I need to level up more? I'm a soulsborne veteran but I have to admit DaS3 has some stupid artificial difficulty.
Also keep getting overran by mobs before I can find a week spot.

If I remember correctly the mobs stop spawning after you kill enough of them. If not. Just hit his little flubber spot on his belly till it pops. Learn his attacks and be cautious.
It's a tree. It's weak to fire and axes.

Nah DaS3 is quite a bit harder than the other souls games, there are maybe only a few bosses in DaS1 that compare (and maybe the end dragon boss in DaS2)
I kind of gave up on DaS3, not so much for the difficulty, but because I found the game kind of boring. I'm thinking about getting the PC version just for the 60fps when the price drops because playing these games below it is part of the problem I have with them - they are much better at higher frame rates.

The weak spots are obvious but you get to the stage where there aren't any left. I only beat him by fluke (throwing black firebombs that just happened to hit his arm) so OP is not necessarily baiting

All the feral enemies in this game have really fucked attack animations and hitboxes. I genuinely can't tell what I'm supposed to be looking at half the time.
Pontiff was fucking cake by comparison, he moved with purpose. These enemies actually feel like RNG whether or not I'm going to dodge the attack
