Most of the time you don't get the opportunity to run to the stairs though, you get cornered almost instantly if one of the dogs jumps at you or rushes you. Best way to handle the fight is to just go in with high poise and immediately smash the two dogs. Getting the stone armor makes the fight a cakewalk.

I beat every boss untill Gwyn without even using a lock-on feature. Before Gwyn I only used lock-on aim with knives/bombs.

well you don't just run straight to the stairs like an idiot, that wont't work 100% of the time... you have to zig zag a little bit, lead the dogs the other way and fast roll away from everything else
same thing applies when rushing to other fog doors in the game, some enemies will fuck you up if you just run in a straight line away from them i.e darkwraiths, silver knights etc

Depends on how good you are and if you have a decent weapon/spell yet. There's the crest shield that is found when you return to the asylum that makes it a lot easier to not die so it's just about having enough damage output so it isn't tedious.
