all are good, but you don't need alchemy or enchanting if you have spells that do the same shit
if you're doing a spellsword, you could leave out destruction since you're damaging with your sword, and take restoration, alteration (lock opening), and illusion (cloaking and sneaking)

I have played a LOT of Morrowind, Oblivion and Skyrim. There are great things about each game, but especially for when it was released Morrowind was (and is) truly incredible in ways the others aren't.
Things I think Skyrim objectively did better than Morrowind: graphics/lighting, physics, combat, perks are a nice addition in theory (shouldn't be a replacement), music and sound is handled much more smoothly (better fade in/out, especially for combat), better ambient sound, better (not great) AI.

I picked 3 out of 4 Willpower and Intelligence skills as major/minor, which means I have only 1 skill of those left to train extra for getting the x5 multiplier after I have 10 level up points.
Ideally (well, if you plan to get the most out of your character stat-wise), you pick a varied set of skills (and their governing attributes) as major/minor, and pick passive ones at that (like alchemy or enchant) so you can control when you level up. Also max out endurance asap for maximum health.
But if you're not an autismo like me you just pick some varied set of skills you want to be good at as major/minor and just play the fucking game and have fun.

Lore, setting and landscape are a quite subjective.
Skyrim added a whole new language, Dovah, the fate of the Falmer, expanded the lore regarding the Voice, Auriel and the Nords, and two Daedric realms to explore.
From what I've read pre-TESV Skyrim was mostly frozen, but they added different biomes to it.
I also don't see how tablebound enchanting and alchemy is a bad thing. It makes it more challenging.

Not really. The only annoying things are that everyone and their mom suddenly talk about Solstheim and that you keep getting assraped by DB assassins from level 1. There are 2 small mods that fix those problems and make the game more balanced with the expansions installed. You get basically the same effect if you don't install the expansions in the first place, but that can be more of a hassle if you use mods that depend on it.

Telvanni as a House may have been lost, but Telvanni lords never really gave a damn about that and were all about massing personal power. Thing is, that's not exactly a compelling story to me. Stuff in the background with Aldmeri Dominion versus Talos and Towers holding the world together was far more interesting, but lore usually is in TES games. I don't think they really want to make the main quest of a TES game about politics and war, that would require them to branch the main quest into two very different outcomes, and they haven't done so since Daggerfall for some reason.
